Hey, y'all, I wanted to share another recipe with you! My mother made this recipe often during the cooler months of the year and she made sure to always make it for Super Bowl Sunday. I have changed a few things from the original recipe: I double the kidney beans and serve it with shredded cheddar cheese and spoon it over saltine crackers. Yummy!
1 lb. ground beef
1 onion, diced
1 green pepper, diced
2 cloves garlic, minced
1 can diced tomatoes (with liquid)
2 cans dark red kidney beans, drained
1 packet hot chili seasoning
shredded cheddar cheese (optional)
saltine crackers (optional)
In a large saucepan, brown the ground beef; drain. Add the onion, pepper, and garlic and brown. Add the tomatoes, beans, and seasoning and mix together. You can either continue to cook on the stove, simmering for approximately 45 minutes. Alternatively, put the chili into a 2 quart (or larger) slow cooker. Cook on low for about 3-4 hours. Serve while hot and top with cheese and serve with crackers.
